I have just made a batch of muffins...that are good for energy boost...and are great for a breakfast muffin....without the guilt.
I made Oatmeal / Cranberry muffins...
Soak together for one hour...
1 cup rolled oats
1 cup of milk (I use Vitamin D whole milk)
Mix together thoroughly...
1/3 cup soft shortening...(I like real butter...but you can substitute healthier)
1/2 cup brown sugar
1 egg
1/2 cup dehydrated cranberries...or crushed cranberries
Sift together.....
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
...and stir in alternately with rolled oats and milk mixture.
Fill greased muffins cups 2/3 full. Bake until golden brown. Serve hot.
Oven Temperature: 400 degrees
Time: 20 - 25 minutes
Yield: 12 medium-sized muffins
